What is in the range.

Pickle means a different product to each group of shoppers, so the range is built by cuisine.

  • South Asian: Mitchell's mango, mixed, Hyderabadi and boneless pickles; Ashoka mango, lime, garlic, chilli, brinjal, carrot and turmeric pickles, with Gujarati styles such as chhundo and gor-keri; Patak's lime, mango, garlic, chilli and mixed pickles; and Shan and Ahmed mango and mixed pickles.
  • Polish and Eastern European: cucumbers in brine and in vinegar, gherkins and cornichons, sauerkraut plain and with carrot, and red cabbage, from Rolnik, Vitarol, Krakus, Hektor, Edmal and Darko in Poland, Kedainiu in Lithuania, Spilva and Dimdini in Latvia and Ukrainka in Ukraine, with Zakuska and Emela. Podravka ajvar is here too.
  • South African: Miami mango and vegetable atchar in mild, hot and garlic, and Pakco vegetable atchar.
  • Chinese, Thai and Japanese-style: Lv Zheng Food preserved ginger slices and pickled radish, Yanco sushi ginger in pink and white, and Pigeon pickled mustard greens.

Who makes the main brands.

Mitchell's is the brand of Mitchell's Fruit Farms, a Pakistani food company that dates from 1933.

Ashoka is a brand of ADF Foods, an Indian food company, which lists pickles and chutneys in the Ashoka range beside its pastes, ready meals and frozen breads.

Patak's goes back to the Pathak family, who came to Britain in 1956. The brand says its turning point was pickling vegetables and preserving ground spices in oil.

Ahmed Foods was founded in Karachi in 1952 and began with pickles and preserves.

Formats and case sizes.

South Asian pickles come two ways. Retail jars run from 283g to 575g: Patak's in sixes, Ashoka in sixes and Mitchell's in twelves of 360g. Catering packs are 1kg, six to a case, from Mitchell's, Shan, Ahmed and Ashoka.

Polish and Baltic jars are larger. Most cucumbers, sauerkraut and red cabbage come in jars of 650g to 900g, six or eight to a case. Vitarol and Rolnik also come in 1.7kg jars, and Dominik and Darko sauerkraut comes in 500g and 1kg packs.

Miami atchar comes in cases of twelve. Sushi ginger and preserved ginger come in 150g packs and in 1.5kg catering packs, ten to a case.

Cucumbers are labelled either "in brine" or "pickled", meaning in vinegar. Several brands supply both, and they are not substitutes for each other.

Every line in this section is listed as ambient.

What to range first.

A South Asian shop starts with Mitchell's mango and mixed pickle in the 360g jar; those are the pickles trade buyers search for by name. Add a lime pickle from Ashoka or Patak's, then the Hyderabadi and regional styles.

A Polish or Eastern European shop starts with one cucumber in brine, one pickled cucumber and a sauerkraut, then adds gherkins, red cabbage and ajvar.

A South African fixture starts with Miami mango atchar in mild and hot.

Takeaways and restaurants take the 1kg South Asian pickles. Sushi counters take pink or white sushi ginger in the 1.5kg pack.
